High Protein Puncher

Perfect For Batch Cooking & Sticking In The Fridge/Freezer For A High Protein, Complex Carbohydrate Rich Meal With Good Fats, Vitamins & Minerals.


This Recipe Will Make 3 Servings


  • 250g chicken breast, cut into strips

  • 50g raw cashews

  • 50g quinoa (pre cooked as per packet instructions)

  • 1 red and 1 green pepper

  • 1 onion

  • 1/2 tin/carton of chopped tomatoes

  • Garlic powder

  • Ginger powder

  • Ground black pepper

  • 1 tablespoon of honey

  • 1 tablespoon of soy sauce


Preheat oven to 180ºc


Slice up the peppers and onion. Place into a bowl


To make the sauce, mix together the chopped tomatoes, honey, soy sauce & spices with 300ml of water


In an oven place dish, first put a layer of the veg, followed by the quinoa & then finally the strips of chicken. Pour over the sauce


Place in the oven for 45 mins.


Remove from the oven, stir to mix together the layers & scatter over the cashew nuts & return to the oven for 10mins.


Serve & enjoy!
