Houmous Or Hummus? Hmmmm

However you prefer to spell it, this recipe uses it as a tasty, protein packed topping option to flavour up your chicken breast for this macro balanced lunch option!



Houmous/Hummus Crusted Chicken With Turmeric Rice


Per Person/Serving:

1 Skinless Chicken Breast

1 Tbsp Houmous/Hummus

30g Wholegrain Rice, Dry & Uncooked

1/4 Tsp Turmeric

1/2 Large Tomato, Sliced & Diced

Handful Baby Spinach


Preheat Oven To 180ºC


Line a baking tray with greaseproof paper & place the chicken breast/s on it. Spread the houmous evenly over the chicken & place in the over for around 25 mins/until cooked through


Place the rice in a pan of boiling water & cook as per instructions on packaging. Once the rice is nearly ready, add in the chopped tomato & turmeric for the last 5 mins.


Place the chicken, rice & spinach onto a plate and enjoy! (If you prefer, you can slightly wilt down the spinach by gently steaming or leave it in it's raw state.




This recipe also makes the perfect meal prep dish. Just keep in an airtight container in the fridge for up to 3 days.
