A festive foodie treat to make & share with friends & family....or just keep them all for yourself, we won't tell! If you're a fan of those little round crunchy chocolates with the hazelnuts inside wrapped in the gold foil, then you will LOVE these!
You Will Need:
1 cup blanched hazelnuts, divided
4 large Medjool dates
¼ cup cacao butter, grated
2 tablespoons raw cacao powder (if you can't find any, good quality cocoa powder will be fine)
2 teaspoons vanilla extract
pinch fine Himalayan salt
¼ cup 80% dark chocolate, broken into chips (dairy free)
1 tablespoon maple syrup, optional
Method:
Process the dates and ½ cup of hazelnuts (reserve the remaining ½ cup) in a food processor/blender for around 90 secs
Add the reserved hazelnuts, cacao butter, cacao powder, vanilla, salt and maple syrup to the food processor and process for 1 minute.
Line a baking tray with greaseproof paper. Roll the mixture into small balls, using about 2 teaspoons of the mixture per ball. Place the balls onto to the tray and then put the tray into the fridge.
Melt the chocolate slowly in a bowl over a pan of hot water or microwave.
Take the tray out of the fridge & drizzle the melted chocolate over the balls. If you have any spare hazelnuts, you can finely chop a few to scatter on top.
Return the tray to the fridge to allow the drizzled chocolate to harden or serve straight away. Once ready, store in an airtight container in the fridge/a cool place until ready to serve/parcel up!
